Saignee juice was pulled from premium lots of zinfandel in order to improve these red wines. Incredible Pink is the happy byproduct of these zinfandel juices being barrel fermented. As the resulting wines were getting close to dry, they were racked off of lees, and sulfite to prevent malolactic fermentation. We managed to preserve about 1.5 g/L sugar which adds to the body
of this fun summertime wine.
